Smoked Chicken Sausage with Vegetables

 

1 package smoked chicken sausages ( 5 links per pack, any flavor)

cut into bite size chunks

1 cup rough chopped onion

1 cup diced (bite size) apple

1 cup diced (bite sized) celery

1 cup carrot coins (cooked till slightly tender)

1 ˝ cups diced (bite size) cabbage

cook spray

olive oil (or 1 very small dice of 1 rasher of meaty bacon)

 

Heat a large skillet, spray with cook spray, add the bacon and let cook till gat is rendered and bacon is lightly crisped.

 

Add the sausage and then rest of the ingredients as they are cut up, into the skillet and sauté till lightly browned.

 

Serve with hot crusty bread.  Soup if you wish.

 

This is one of the fastest meals from scratch I’ve ever made!
